a favorite lunch these days includes a green salad con frijoles and a citrus fruit salad.
tortilla chips on the bottom, layered with organic spring mix, warmed black beans and to top it off my homemade pico de gallo(red onion, roma tomato, lime, cilantro, salt).
the fruit salad is peeled and chopped orange and grapefruit with a pinch of sugar!!
ned and i are trying to eat more vegetables and fruit and this was inspired out of necessity to spruce up our salads. give it a try! it is yummy!
