gotta love the corn

it is harvest season.  
which means time to can and freeze fruits and veges for the winter.  we began with corn this year.  our wonderful friends "hooked" us up with a few hundred ears of corn.  after an entire day of shucking, cutting, cooking and packaging, we have a some yummy corn to eat when it is cold outside and we are craving a little corn on the cob flavor!!

but he kept putting in front of his face!

we found a few mini-corn in our pile too!
now we are done shucking the corn, we can get on to preparing it to freeze!


first, my obedient son cut the corn right off the cob for me.  
he helped me most of the afternoon and even did it cheerfully (most) of the time. 




now it is ready to cook in the stock pot!


after cooking it cools for a bit. 

then i put them into quart bags and then i put the quart bags into 
gallon bags and they are ready to go into the freezer!!

i love frozen corn in the winter, especially when it is fresh from the cob!!

Awesome! THat is a lot of corn! We've been doing peaches. The corn is a great idea...oh Ashley....you're so inspiring. :) Happy late birthday to Will! :)
